Handmade bean-to-bar chocolate with 75% Criollo cocoa from the Amazonas region in the northeastern part of Peru
The high-quality cocoa beans are produced ecologically and under fair conditions in Bagua Grande, located at 450 meters above sea level and complemented by natural forests that exist around it. The climate of the tropical forest there is especially suitable for cocoa plantations.
These native cocoa beans belong to the Criollo family. The beans are medium-sized and they require a fermentation time of about 6 days. This is done in wooden boxes. After this process the cacao beans are dried in the sun.
The multifaceted flavor profile is dominated by soft citrus notes, with traces of fresh nuts and wild fruits.
It tastes of citrus, strawberry, guanabana, anise, banana, honey, dark sugar, loam and grass.
The aroma and taste of this chocolate is similar to a good soft white wine.
